Chicken and Sausage Gumbo

1 cup flour
1 cup oil
1 lb. smoked sausage (cut into 1/3 in. thick sections)
1 lb. chicken (cut up)
3/4 cup diced onions
3/4 cup diced green onions
1/2 cup diced bell pepper
1/2 cup celery
1 can of cut okra
(fresh or frozen also, but boil in separate pot before hand)
gumbo file', cayenne pepper (to taste)
garlic powder, salt, pepper (to taste)
Roux: Have quart of water ready. Put oil & flour in pot on medium. heat & stir constantly until medium brown. Be careful not to burn. Should take about 25 minutes or more. When done add water.
Turn up fire and add vegetables except okra. Bring to low boil and add seasonings except gumbo file'. Let boil for about ten minutes and add raw chicken and sausage. May need to add water. Bring to high boil then progressively to a simmer over ten minute period. Continue simmer and add okra and file' about last fifteen minutes (prevents sliminess). Serve over rice and with potato salad.
