Easy Pecan Pie

Pie Shell:
1 cup flour
1/3 cup + 2 tbs. shortening
1/4 cp. Cold Water
1/4 tsp. Salt

Makes one 9" pie
Mix flour and shorting on low speed in mixer or mix by hand until dough is crumbly. Dissolve salt into the water and mix slowly with dough till dough becomes workable. Don't let the dough get too wet. Roll dough out in a large circle. Place in pie pan.

Filling:
1-1/2 cups + 1 tbs. sugar
1 tbs. butter or margarine
1 tsp. salt
4 beaten eggs
1/4 white corn syrup
1/2 tbs. vanilla
about 1 cup pecan halves or pieces

Cream together sugar salt and butter until smooth and no lumps appear. Add beaten eggs. Mix well. Add corn syrup to mixture and blend well. Place pecans in bottom of pie shell. Completely cover bottom. Pour mixture on top of pecans. Bake 40 minutes or in preheated oven at 350 degrees. Let cool completely.
Slice up and enjoy!

Total time to make: about 1 hour.
