Fettuccine with Herbed Ricotta
Ingredients :
1 lb fettuccine,cooked COMBINE IN FOOD PROCESSOR:
4 green onions, trimmed/sliced
1/4 cup parsley
2 tsp. dried tarragon
3/4 tsp. grated lemon peel
1 tsp. salt
1/4 tsp. pepper
1 cup ricotta cheese
1/2 cup sour cream
IN A LARGE SERVING BOWL COMBINE:
1 tsp. mustard
1/2 cup chicken broth
Instructions :
1) Combine all the ingredients for the food processor and puree until smooth.
2) In a large serving bowl combine: 1 tsp. Dijon mustard and 1/2 cup chicken broth.
2) Add ricotta mixture and whisk together until smooth.
3) When pasta is done, drain thoroughly and add to serving bowl; toss to coat. Serve
immediately. If desired, pass grated parmesan cheese to garnish.
