Fresh Corn Pie

Ingredients :
Double pie crust, your favorite
2 eggs,lightly beaten
2 tbs. melted butter
2 tbs. flour
1/2 cup milk
Beat together
4 to 5 cups fresh corn
2 tbs. chopped green peppers
2 tbs. chopped onions
2 tbs. chopped celery
2 hard boiled eggs

Instructions :
Make your favorite double pie crust. Line a 9 inch deep pie plate with the crust. Then mix the corn, green peppers, onions, and celery, add the beaten mixture of flour, eggs, milk and butter, mix till all coated. Pour into pie shell and add two sliced hard boiled eggs on to top. Cover with the second pie crust and seal good so the juice does not run out. Put a few vent cuts in the crust. Bake at 350 degrees F. for one hour or till lightly golden. Next warm four cups milk and add 1 stick of butter and warm till the butter melts. This you put over your slice of corn pie. Add the amount of salt and pepper to your taste. This is great when corn is in season. Don't forget to use a soup dish for the serving of the pie.
