Hearty Beef Salad

1 hard boiled egg, cut into wedges
2 cups diced cooked beef
1/2 cup French dressing
1 l0-ounce package frozen peas, cooked and drained
1/2 cup shredded carrots
1/3 cup mayonnaise
4 lettuce cups
1 tablespoon chopped chives

Marinate beef in French dressing for 30 minutes. Combine with peas and carrots; blend in mayonnaise. Spoon mixture into lettuce cups. Garnish with egg wedges; sprinkle with chives.
