Open-Face Sausage & Pepper Sandwich

Ingredients :
3 bell peppers, cored and cut into strips
2 medium red onions, cut in 1/2-wedges
1/4 cup bottled balsamic vinegar salad dressing
1lb fresh italian chicken/turkey sausage
cut into 2-inch pieces
1 long loaf Italian or french bread
1 tbsp olive oil
1/2 tsp. dried oregano
1/2 cup shredded mozzarella cheese

Instructions :
1) Heat oven to 500-550. Line 2 jelly-roll pans with foil, grease foil.

2) Spread bell peppers and onions in 1 pan; drizzle with 3 tbsp of the salad dressing and toss to coat. Place sausage in the other pan; drizzle with remaining dressing and toss to coat.

3) Roast 10 minutes or until sausage is cooked through. Meanwhile split bread lengthwise, leaving 1 long side attached (like a hinge). Open load. Brush cute sides with olive oil, then sprinkle with oregano and cheese.

4) Remove both pans from oven. Toss peppers and return to oven; place bread cut sides up on the oven rack. Roast 5 minutes or until break d lightly toasted and peppers and onions are tender and slightly charred.

5) Top bread with peppers, onions and sausages. Cut loaf in quarters. Eat sandwich with fork and knife.

Serves 4
