Potato Onion Soup

1 cup chopped onion
3 tablespoon butter or margarine
3 1/2 cups chicken broth
1/2 package (4 servings) instant mashed potatoes
1 teaspoon salt
dash of pepper
3 cups light cream
3 tablespoons chopped parsley
Sauté onion in butter or margarine in medium-size saucepan
until tender; add
broth; simmer 15 minutes. Add potatoes, salt, pepper, and cream;
simmer gently until heated through; do not boil. Sprinkle with
parsley; serve hot.
